o	Rack and return if winemaker doesn't choose to select a holding vessel, I can't add after the fact
o	Drain and press if winemaker chooses to combine free run and press wine, but then decides as the wine is pressing to make a press cut, we have to rewrite the workorder

> **Nachteile**: It's not very fudge-able. Veers from cellar management priorities into some tricky accounting issues with regard to exact volumes. End result is that what's really in the cellar never exactly lines up with what's in the software.
